Piniritong Hito

I use to eat piniritong hito. Pan fried with salt. Soy sauce or patis on the side and eaten with rice. Fresh hito is a must. You need to clean it in a special way..using salt to remove the slime if I recall correctly.

is hito catfish or mudfish? yep, i had some of that (char-grilled) back in Pampanga in 2002... is that fish available here in special markets?
